The water bottled at Red Hill fell as rain around the time the Roman Empire was at its height.
It has spent the two millennia since travelling downward through mineral-rich soil and rock to an aquifer 900 metres below the southern coast of Victoria.
The country
Victoria's high country is written in volcanic rock — basalt columns, granite tors and the falls that cut through them.
That same geology is what the rain passes through on its long descent, picking up the minerals the water is known for.
The name
Port Phillip, Western Port and Bass Strait meet around the Mornington Peninsula, and the aquifer runs beneath all three.
Red Hill sits at the centre of that ground — wine country, orchard country, and the point where the water is drawn.

Three Bays is bottled exclusively in glass. At 1300 mg/L of dissolved solids the water carries a great deal of character, and glass is the only container that leaves it untouched.
The result is naturally alkaline at pH 8.3, remarkably low in nitrates, and known for a mouthfeel drinkers describe as creamy.

At the heads, Port Phillip empties into Bass Strait over a shelf of reef that has guided and wrecked shipping for two centuries.
